The Courage to do Nothing

This is our favorite quote during crush. Especially when we are tempted to “fix” something that doesn’t seem quite right (sluggish fermentation, eggy aromas, low sugars in grapes). Over the years we’ve learned to trust our vines and our grapes. This requires a certain humility on the part of those making the wine. Experience also helps. The more a winemaker gets involved in the process, the less terroir speaks.
