There are certain aromas and flavors that enhance complexity and interest in small amounts. Those same compounds can be considered flaws in large amounts. Individual tasters often disagree on where the fine line falls between complexity and flaw.

If they are minimal, they add a complexing factor to wines. The gun flint of Chardonnay, the boxwood of Sauvignon Blanc, wet straw of Chenin Blanc, gaminess of Syrah, or the petrol of Riesling are all examples. However, fruit needs to always be the dominant flavor or aroma.

The same concept is found with fine perfumes and cuisine. Musk oil is not an attractive smell, but an important component of perfumes. Smelling truffle oil, fish sauce, or asafetida on their own for the first time might be a big turn off for those new to the culinary arts. But I have all three in my spice cabinet and use them regularly.
