Domaine Roulot Bourgogne 2014
This wine is a confirmation of Linden’s path towards elegance, restraint, and harmony over power and obviousness. The Roulot is in a great drinking window with poise and seamlessness. Nothing stands out. It has textbook textural balance. Aromas and flavors are very Burgundian with a slight flint reduction on the nose and a zesty saline finish. It certainly does not taste like the New World definition of varietal “Chardonnay.“
In 2013 Jonathan and Jim visited Domaine Roulot. It changed the way we approach the vineyard and the cellar. Élevage is the winemaking term for aging the wines in the cellar. We learned from Roulot that this should not be taken for granted. We learned the importance of delaying bottling and aging the wine for a longer time in contact with its lees (yeast sediment). This harmonizes the wine’s texture. And chardonnay is all about texture.
